HOW TO MAKE CARB FREE CHEESY TACO SHELLS – FINALLY A SUBSTITUTION!

An important part of leading a healthy eating lifestyle is cutting back on the carbs. One of my favorite things to do is find substitutes for those nasty carbs so that I can still enjoy eating! This is an easy way to sub those carby tortillas, chips, and taco shells. You can use this recipe to make regular tacos, taco salads, nachos…the possibilities are endless and only capped by your imagination!

One thing I really missed was picking up a taco, biting into it and savoring the beautiful combination of flavors. When I discovered taco shells made from cheddar cheese my life got better lol. To me, these are better than tortillas because I truly love cheese.

INGREDIENTS:

Shredded cheddar cheese
Taco meat
Any taco toppings you want!

DIRECTIONS:

1. Line a baking sheet with parchment paper, or a silicone mat if you happen to have one. Drop little piles of shredded cheddar cheese on to the sheet. For taco shells I suggest using about 3oz of cheese per shell.

2. Place the baking sheet in the oven and bake at 350F for 5-7 minutes, or until the cheese has melted and the edges begin to brown.

3. To shape the baked cheese into taco shells simply set up 2 glasses and place a thick handled spoon across the 2 glasses. You want the handle to be thick enough that it will leave a space of about 3/4″ in the curve of your taco – this can be modified if you want a larger crevice to place more toppings in. Let the cheese cool for a minute then lift it off of the baking sheet and drape it over the spoon handle. Let it cool completely, this only takes about 5 minutes, and you will have a low carb taco shell.

4. Fill your taco with whatever you like in your tacos 🙂
